    Links with the designer and architects

    DUCASSE Conseil reviewed the plans for the kitchens and dining rooms in order to improve their layout, flow, and ergonomics, and to adapt the list of equipment to the future offering.

    Creation of the F&B concept

    Taking into account local market analysis, investor expectations, and operational expertise, DUCASSE Conseil created the entire F&B concept and customer experience for the hotel’s main restaurant, bar, mezzanine, and rooftop (culinary identity of the venue: tableware, staff uniforms, customer experience, positioning of the bar and wine cellar).

    Benchmark

    DUCASSE Conseil analyzed the local competition in order to challenge the initial positioning desired by the internal F&B teams.
