DUCASSE Conseil was asked to assist L’Oréal Paris’s Aulnay-sous-Bois campus in its efforts to strengthen the skills of its kitchen teams and modernize the culinary offerings of its company restaurant.

The DUCASSE Conseil teams visited the site to analyze and understand the company restaurant environment and sample the current offerings.
The DUCASSE Conseil consultant chef designed a tailor-made training program based on an analysis of the existing menu, with the aim of reworking L’Oréal’s recipes and stimulating the creativity of the teams.
L’Oréal’s teams were then trained in DUCASSE Conseil’s training kitchens. The aim was to support the head chef and operational teams in taking charge of modernizing the company restaurant’s menu plan, while strengthening their culinary skills and technical know-how.
