DUCASSE Conseil was asked to assist L’Oréal Group’s Aulnay-sous-Bois and Clichy campus in their efforts to strengthen the skills of their kitchen teams and modernize the culinary offerings of their company restaurants.

    Assesment of the environment

    The DUCASSE Conseil teams visited the site to analyze and understand the company restaurant environment and sample the current offerings.

    Creation of tailor-made training

    The DUCASSE Conseil consultant chef designed a tailor-made training program based on an analysis of the existing menu, with the aim of reworking L’Oréal’s recipes and stimulating the creativity of the teams.

    Skills development training for the head chef and operational teams

    L’Oréal’s teams were then trained in DUCASSE Conseil’s training kitchens. The aim was to support the head chef and operational teams in taking charge of modernizing the company restaurant’s menu plan, while strengthening their culinary skills and technical know-how.
