Café Teatral in Almaty is located in one of the city’s most sought-after locations. Its owner has rethought the restaurant’s approach, changing the offering from a banquet format to an à la carte service.

Our approach

Understanding and analysis of the environment
The DUCASSE Conseil teams came to Almaty to understand how the restaurant was organized and carried out a benchmarking study of competitors.

Creation of the culinary identity
Based on the analysis of the environment, the restaurant’s culinary identity was redesigned to position it as a French brasserie with Kazakh roots.

Operational assistance to the kitchen designer
DUCASSE Conseil worked with the owner’s kitchen designer to create a 450 m² kitchen. In line with the proposal, we also drew up a list of all the necessary equipment and small appliances.

Recipe creation
Drawing on Café Teatral’s new culinary philosophy, DUCASSE Conseil has created 30 recipes inspired by French tradition, incorporating Kazakh influences through a selection of local products.

Wine list and cocktail creation
DUCASSE Conseil’s mixology expert developed five cocktail recipes and created a wine list consistent with the identity of the venue.

Coordination with the architect
The DUCASSE Conseil expert defined the interior design concept for the establishment, taking into account the chosen style, as well as optimizing traffic flow, service efficiency, and customer comfort.
