Since 2025, DUCASSE Conseil has been supporting the Pinto teams in developing the concept and overseeing its operational implementation, with the ambition of enabling its international expansion.

Immersion in Pinto’s universe, exploration of Ayurvedic principles, local and international market research, and competitor benchmarking.
Supporting the Pinto teams in developing a financial forecast, including a projected budget, revenue projections, and forecast financial statements.
Defining the culinary philosophy, establishing the venue’s identity, and identifying the preferred product ranges and recipes to shape Café Pinto’s offering.
Developing Café Pinto’s recipes, followed by tasting sessions at DUCASSE Conseil’s kitchens in Argenteuil.
Developing the beverage menu structure, sourcing products, particularly teas and coffees, and conducting tasting sessions. The support was subsequently extended to the creation of the wine list, along with five signature cocktails and five signature mocktails.
Training kitchen teams on the spring-summer and autumn-winter menus, hospitality training for front-of-house teams, opening assistance, and on-site quality monitoring.
The support also includes assistance with the recruitment of a Food & Beverage Director.
